So I'll have to admit.
As selfish as it sounds, during this quarantine and all of the yuck that is going around right now... I haven't been able to get anything green! We put in our pickup order the other week and when we got there to get our groceries, they weren't able to get us any of our fresh veggies because they were all gone! I was super bummed because we eat a lot of fresh food.
Anyways, that was a struggle! #firstworldproblems
The next time we went to get groceries, same thing!!!!
SO, we went back to old faithful. SPROUTS!
If you haven't grown them before, then here's your wake up call to start. They are so good for you, and so yummy! We absolutely LOVE a good sprout salad.

If you aren't in the sprout game quite yet, then today is your lucky day because I'm giving you all of our sprout secrets.

First of all... You'll need the seeds. Can't get sprouts without the seeds.
We buy our seeds from Botanical Interests. They have organic, non-gmo seeds and they have always turned out great for us. These are so freshly grown, that I'd really encourage you to go organic, even if you generally don't really care.
Our favorites to use are:
Alfalfa (high in protein, essential amino acids, digestive enzymes, vitamins, minerals, andchlorophyll)
Broccoli (higher levels of the cancer-fighting, phytochemical sulforaphane glucosinolate than mature heads of broccoli, while also contributing vitamins A, C, and E, calcium, and fiber to the diet)
Mung Bean (high in protein, iron, magnesium, many vitamins, and are a good source of dietary fiber)
Purple Kohlrabi (health-promoting phytochemicals, B-complex, vitamin C, and more)
Red Clover (vitamins, minerals, protein and beneficial isoflavones)
They also have a "Sprout Sampler" that may save you some money, and help give you a good idea for what you may want next time!

Here's what to do:
Pour desired amount of seeds into jar. Feel free to mix seeds, just make sure their harvest time is in similar range so that you aren't wasting any seeds.
Fill jar with water (about half way or so) to soak seeds.
Pour just a drop ( and I mean just a drop, like a raindrop or two) of your hydrogen peroxide into your seed/ water mix and swirl until you feel the peroxide is dispersed evenly throughout the water.
Twist your sprouting lid onto the jar.
Let seeds soak overnight or about 12 hours.
Drain water from seeds (keep lid on jar).
Shake seeds so that they are dispersed in the jar from top to bottom and place jar in a tilted position (so air can get to seeds) on windowsill that gets a medium amount of sun.
Rinse/ Swirl seeds in water one time everyday until harvest time.
Now enjoy your yummy sprout salad!
We love to toss them in lemon juice and olive oil. Top with salt and pepper (Parmesan too if you're feeling crazy). Grilled chicken goes great with sprouts if you need something to fill you up a little more!
