Stuck At Home: Cheesy Keto Dinner Rolls

Okay, lets be real for a second.


I don't love these rolls because they are "Keto". I'm not even on a keto diet. Probably like many of you, I just like good food. Whether its keto, low carb, low fat, blah blah blah.


I like food.


My husband does too.


And so does my daughter. So there. We are just a family that likes food, ok?


Anyways, these dinner rolls are ah-mazing. They don't make you feel bloated or yuck afterwards either. (unless you eat like four of them) :P


So, if you are stuck at home, these are a fun addition to help complete your dinner.


Let's get to it!


Servings: 8


You'll need:


  • 1 1/2 cups of shredded mozzarella cheese (can be subbed with cheddar... YUM)

  • 2 oz cream cheese

  • 1 1/2 cups almond flour

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/4 tsp xantham gum (guar gum works too)

  • Pinch of salt

  • 1 large egg

  • 3 tbsp melted butter (this is for after you pull rolls out of oven)

  • Garlic powder for dusting




Directions:


  1. Preheat oven to 350 degrees. Cover baking sheet with parchment paper.

  2. In a small bowl, mix almond flour, baking soda, baking powder, xanthan gum (or guar gum) and salt.

  3. Heat shredded cheese and cream cheese in a microwavable bowl for 1- 1 1/2 mins until cheese is melted. Once melted, mix thoroughly and place in a mixing bowl.

  4. Beat almond mixture into cheese mixture. Add egg and mix well.

  5. Gather dough and form a ball. Slightly flatten and divide into 8 equal pieces. Roll each piece into small balls.

  6. Place each ball on cookie sheet leaving 1 1/2 - 2 inches between each. Bake for 12 mins. or until golden brown.

  7. After removing from oven, brush tops with melted butter and sprinkle a dusting of garlic powder on top.
